About Us
My story
It has been a dream of mine to open my own restaurant. I have always enjoyed sharing things that I create, from art to food, that is my passion. At an early age, working in a summer camp kitchen, I started my path into the restaurant industry. After working mostly as a bartender for almost two decades, I decided to pursue my dream. I understand that this is a difficult goal, so I am starting small.
The Peregrine Cafe trailer is the first step in my overall goal.
What's in a name?
I have always been an admirer of birds of prey. They are grace, power, and beauty, wrapped in a sleek package. My personal favorite is the Peregrine falcon. They are not the biggest, or the strongest. But they are, arguably, the fastest animal in the world, reaching speeds exceeding 200mph in their dives. They achieve that without giving up versatility and adaptability, which is why you can find them thriving everywhere.

Our food flies fast!
The concept is simple - offer delicious food, fast. I also noticed that there are not many food trucks or trailers offering breakfast food options, and I love breakfast food! Combine that with beignets (French doughnuts) and poutine (French fries topped with gravy) and we have our menu concept.
